pesto baked friesHi friends! I know I’ve been MIA for a while, but for good reason. Our landlady decided it was time for a major kitchen upgrade and our kitchen has been under a scrupulous remodel for the better part of a month. Hence, no cooking or baking for me! Today is the very first time I’ve had an opportunity to try out our new space and I could not be more excited to get back to work.

delicious baked pesto friesI couldn’t think of a better way to get back to it, than with these easy and delicious (did I mention addictive?!) fries. I’ve always wanted to master the art of the french fry at home, and I think I’ve finally done it. Topping these golden matchsticks with pesto takes my favorite comfort food to a new level of garlicky, basil delight.

Ingredients

Oven Baked Fries

  • 4 russet potatoes (washed, scrubbed clean and dried)
  • 1 tsp. salt + more as desired
  • 1 tsp. smoked paprika
  • 1 tsp. garlic powder
  • 1/4 cup of olive oil + 1 tbsp or so more (to grease baking sheets)

Pesto

  • 4 garlic cloves (peeled)
  • 2 tbsp. nutritional yeast
  • 2 cups of packed basil
  • juice of 1 lemon
  • 1/2 tsp. salt
  • 1/2 cup olive oil
  • 1/4 cup pinenuts
  • 1/4 cup walnuts

Instructions

Oven Baked Fries

  1. Preheat the oven to 450 degrees.
  2. Lightly grease two baking sheets with roughly a tbsp of olive oil
  3. Chop potatoes vertically in half. Then half again and cut into matchsticks.
  4. Place sliced potatoes into a large ziplock bag.
  5. Add salt, smoked paprika, garlic powder and olive oil to the bag.
  6. Gently toss/shake to coat evenly.
  7. Distribute potatoes evenly between two baking sheets.
  8. Pop in the oven for 40-45 minutes or until fries are crispy and golden.

Pesto

  1. Place all ingredients in a food processor or high speed blender and pulse until pesto is coarsely ground.

Assembly

  1. Remove fries from baking sheets and place on a large platter or plate. Sprinkle with a dash or two more of salt and top with pesto as desired.
  2. Dig in!
