Basically foolproof, these cauliflower tacos with spicy sauce have graced my dinner table more than a time or two in the past couple of weeks. Best of all, they take less than 30 minutes to throw together and are delicious.

But I’m gonna give you the run down on these nutrient rich, cruciferous babies anyway.

Cauliflower Tacos with Spicy Sauce

Ingredients

  • 1 head of cauliflower
  • 3 tbsp olive oil
  • 3 tbsp ground cumin
  • 12 tbsp Sriracha
  • 3 tbsp Just Mayo
  • 12 limes
  • shredded carrots, cabbage or other veggies (for topping)
  • 12 avocados, sliced
  • 68 corn tortillas

Instructions

For the filling

  1. Pre-heat the oven to 400 degrees F.
  2. Clean and rinse the cauliflower and chop into bite-sized florets.
  3. In a large freezer bag or bowl, mix the cauliflower florets with olive oil and cumin. Shake/coat well.
  4. Place coated cauliflower on a baking sheet and roast for 20 minutes or until browned. Don’t forget to turn the cauliflower/mix half-way!

Spicy Sauce

  1. In a small bowl, mix the Sriracha and Just Mayo together until well combined. Set aside. *Note* Add more Sriracha if you like more spice!

Assembly

  1. Warm the tortillas with a little bit of olive oil and salt if you wish, in a cast iron skillet. Or you can heat them a touch in the oven.
  2. Then pile on the cauliflower, add shredded veggies, avocado, splashes of lime and drizzle with spicy sauce!

    I made these last night and they were delicious! I used two tbsp. of Sriracha and the spice level was perfect (for me, anyway). The recipe is very easy, and I will be making it again!
