Cumin-roasted cauliflower tacos layered with crunchy cabbage, creamy avocado and drizzled with spicy Sriracha-mayo, make any night a taco night!
Warm corn tortillas filled with tender, cumin-rubbed, caramelized edgy cauliflower, loaded with fresh veggies and drizzled with spicy sauce (made from two of my absolute favorite ingredients, Just Mayo and Sriracha) equate to nothing less than taco bliss. Basically foolproof, these cauliflower tacos with spicy sauce have graced my dinner table more than a time or two in the past couple of weeks. Best of all, they take less than 30 minutes to throw together and are delicious.
And not that you really need me to tell you about the health benefits of cauliflower, because let’s be honest, these corn tortilla wrapped dream boats hold their own against any taco, any time. But I’m gonna give you the run down on these nutrient rich, cruciferous babies anyway.
Easily described as superfood, just one cup of cauliflower boasts a mere 29 calories and provides a rich source of vitamin K, folate, fiber and vitamin C. Cauliflower’s my new go-to vegetables for tacos. And after you try these tacos, it will be yours too!
