Simplicity. That’s what all dads appreciate. Today’s fathers often find that they’re running here and there, living hectic, fast-paced lives. That’s why on Father’s Day this simple, chocolatey-rich, soothingly delicious, creamy chocolate pie goes down so easy. It’s a snap to make, disappears in seconds when served, and it’s vegan and gluten-free. Though made from non-traditional ingredients, this is no stodgy, flavorless chocolate pie. In fact, it has a little secret zip to it: almondmilk liqueur. I made it for my dad, and I hope you enjoy making it for yours, or that special someone in your life.

Dad’s Easy Chocolate Pie

Ingredients

Walnut-Brownie Crust

  • 2 cups walnuts
  • 1/2 cup shredded coconut, unsweetened
  • 1 tsp. pure vanilla extract
  • 9 dates, pitted
  • 2 tbsp. unsweetened natural cocoa powder
  • 1 tbsp. coconut oil
  • 1/4 tsp. fine sea salt

Chocolate Pie Filling

  • 7 oz. firm tofu (preferably organic)
  • 3 oz. vegan dark chocolate, melted
  • 2 tbsp. light agave nectar
  • 2 tbsp. unsweetened natural cocoa powder
  • 1/2 cup + 1 tbsp. plant-based milk
  • pinch of fine sea salt

Coconut Almande Cream

  • 1, 14 oz. can of unsweetened coconut milk, chilled overnight
  • 1/2 cup organic powdered sugar
  • 2 oz. Baileys Almande*
  • tapioca flour, as needed

Topping:

  • A few sprinkles of a vegan dark chocolate bar, roughly chopped or shaved

Instructions

  1. Crust: Pre-heat the oven to 350 degrees F. Add walnuts, shredded coconut, vanilla extract, dates, cocoa powder, coconut oil and sea salt to a high-speed food processor with an S blade. Process for 1 minute or so, or until the mixture comes together. Press the crust into the base of a 9 1/2 inch fluted tart or pie pan. Prick the pie crust with a fork a few times, and then bake in the oven for 10 minutes. Remove the lightly baked crust from the oven and allow to cool on a wire cooling rack.
  2. Filling: Add the tofu, melted dark chocolate, agave nectar, cocoa powder, milk and sea salt to high-speed food processor with an S blade. Whirl away until the mixture is smooth and creamy; mousse-like.
  3. Assembly: Pour the chocolate pie filling into the baked pie crust. Use the back of a spoon or a spatula to evenly distribute the filling and smooth it out. Allow the pie to set/chill in the refrigerator for at least 1 hour prior to devouring! (Allow the pie to set longer if you have the time.)
  4. Drizzle: When ready to serve, remove the lid from the chilled coconut milk. Scoop off the layer of thick coconut cream into a bowl (reserving any leftover liquid for a smoothie bowl or other culinary adventure). Add the powdered sugar and blend the cream using an electric mixer. (You can also hand whip the cream with a whisk for about 30 seconds.) Add the Baileys Almande. Whip again until the liqueur is well incorporated. If the mixture is a little runny, add tapioca flour (up to 4 tbsp) to the mixture, and thicken to your liking. Drizzle the coconut Almande cream across the top of the chilled pie.
  5. Serve: Top the pie with chopped or shaved chocolate, then cut dad’s easy chocolate pie into pieces and enjoy!

  • *Noteworthy: When shopping for Baileys Almande, be sure to look for the word “vegan” on the label. The original formulation of this product is not vegan-friendly.
