It was a fall, October day. As in Seattle’s usual fashion, the air outside was crisp, cold and misty. The cloud cover had just begun to settle in for the day. I put a kettle on, and began to think about breakfast. Despite the weather that was brewing outside, my house was full of excitement! Two of my very best friends had come to stay for the weekend in Seattle—all the way from the great state of Texas! As we caught up over tea, I began to slowly pull breakfast together. I made a fresh fruit salad and pumpkin bread—a light breakfast that paired perfectly with a cup of orange pekoe.

Description

Flavorful, juicy and easy to make fruit salad.

Ingredients

  • 1 heirloom orange
  • 1 golden apple
  • 1 banana
  • 1/4 cup dried cranberries
  • 1/3 cup candied ginger
  • 1/3 cup cocoa nibs
  • 1/3 cup shredded coconut
  • several sprigs of fresh mint
  • 1/4 teaspoon vanilla extract, gluten-free
  • 2 tbsp orange juice

Instructions

  1. Roughly chop the candied ginger and set aside.
  2. Chop the apple into small squares and cut the banana into slices.
  3. Peel the orange and cut horizontally.
  4. Cut mint into a chiffonade.
  5. Place all ingredients into a large bowl and mix (i.e. chopped and sliced fruit, orange juice, mint, vanilla, cocoa nibs, coconut and cranberries).
  6. Enjoy!
