It was a fall, October day. As in Seattle’s usual fashion, the air outside was crisp, cold and misty. The cloud cover had just begun to settle in for the day. I put a kettle on, and began to think about breakfast. Despite the weather that was brewing outside, my house was full of excitement! Two of my very best friends had come to stay for the weekend in Seattle—all the way from the great state of Texas! As we caught up over tea, I began to slowly pull breakfast together. I made a fresh fruit salad and pumpkin bread—a light breakfast that paired perfectly with a cup of orange pekoe.
The fruit salad that morning was a big hit. Per request, here’s the recipe! Please enjoy this incredibly easy, flavorful fruit salad. Perfect for a light snack, breakfast or even dessert!
Fresh mint & a splash of orange juice makes this salad burst with flavor. 🙂
