Melon Parfaits

A glass full of juicy + refreshing melon, showered with lime juice, layered with yogurt and topped with pistachios + hemp hearts makes for the perfect healthy treat!

As Laura Ingalls Wilder once wrote, “It is the sweet, simple things of life which are the real ones after all.” Incredibly easy to make, the simplicity of this dish allows pure and simple ingredients to shine through without a lot of fuss. In fact, the most complex thing about this recipe is the melon baller!

Cute Melon ParfaitAlthough not quite melon season, I’ve been craving bright, juicy & refreshing flavors that cantaloupe and honeydew melon provide. The secret of this simple dish comes down to its quality ingredients. Finding the perfect melon at the grocer doesn’t have to be tricky. Here are some tips!

  • Sniff, sniff! To find a ripe cantaloupe or honeydew melon be sure to sniff it for a sweet smell.
  • Size counts. Often, melon that is a bit heavier for its size is a good indicator that it’s ready to be eaten.
  • Complexion matters. Pick cantaloupe that is a golden color (avoid green or white melons). When buying honeydew, look for one that is a bit dull. Underripe honeydew will be shiny.

Melon Parfaits

Description

A glass full of juicy + refreshing melon, showered with lime juice, layered with yogurt and topped with pistachios + hemp hearts makes for the perfect healthy treat!


Ingredients

  • 1 cantaloupe
  • 1 honeydew melon
  • juice of two limes
  • 1-2 cups of yogurt (coconut, almond or cow’s milk)
  • 1/2 cup of pistachios (shelled and roughly chopped)
  • 1 tbsp hemp hearts
  • agave

Instructions

  1. Cut cantaloupe and honeydew melon in half (respectively). Remove seeds with a spoon.
  2. Using a melon baller, scoop out small round melon balls. If you don’t have a melon baller, simply cube the melon and remove the rinds.
  3. Place melon balls in a medium bowl and add lime juice. Lightly mix. Add a drizzle or two of agave as needed.
  4. In four parfait or stemless wine glasses, evenly layer melon and yogurt (as much as desired).
  5. Sprinkle pistachios and hemp hearts on top & enjoy!
