Pumpkin Chocolate Chip Granola Cups It’s fall, y’all! And in case you didn’t get the memo, it’s also pumpkin time. Flashes of orange are abound and I can’t complain! Pumpkins are one of my absolute favorite things about the season; especially when it comes to baking and entertaining. Do you agree? I’ve been including pumpkin and warmly spiced flavors in almost everything on my table this season. And these pumpkin chocolate chip granola cups are no exception!

They provide a great source of fiber, protein, vitamin A and healthy fats. Did I mention that they’re loaded with mini chocolate chips, lightly sweetened with maple syrup and sprinkled with hemp hearts for an extra protein boost? What’s not to like!

Coconut Yogurt filled Pumpkin Chocolate Chip Granola Cups {topped with figs}Load them up with yogurt (coconut yogurt is my favorite, but any yogurt will do!). Top them off with fresh fruit and herbs.

Ingredients

Pumpkin Chocolate Chip Granola Cups

  • 1 cup rolled oats
  • 1/3 cup pepitas (pumpkin seeds)
  • 1 tbsp hemp hearts
  • 6 tbsp organic pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • 1/3 cup mini chocolate chips (I used the Enjoy Life Foods brand)
  • 2 tbsp olive oil (plus more to grease the muffin pan)
  • 2 tbsp maple syrup
  • 1 pinch of salt

Filling/Toppings

  • Your favorite yogurt
  • Fresh fruit and herbs (such as mint & figs)

Instructions

  1. Pre-heat the oven to 350 degrees F.
  2. Lightly grease a muffin tin.
  3. Gently mix all ingredients together (except for filling and toppings) in a medium size bowl.
  4. Portion the mixture between 6 muffin cups.
  5. Using a spoon (or your fingers) press mixture down in the middle and along the edges of each cup.
  6. Bake for approximately 20 minutes.
  7. Remove the granola cups from the oven and let cool. Once cool, remove the granola cups from the tin.
  8. Fill your pumpkin chocolate chip granola cups with your favorite yogurt and toppings as desired when ready to serve.
  9. Enjoy!
