Strawberry Lime Chia Fresca

Refresh and hydrate with this whole fruit + chia-based energy drink!

strawberry lime chia frescaA beautiful drink, chia fresca has origins in Guatemala and Mexico. The chia seed, (salvia hispanica) is historically and culturally known as “the running food” and is touted to have fueled Aztec warriors going into battle. These mighty seeds are a superfood and are an amazing source of soluble fiber, protein, antioxidants and alpha-linolenic acid (an omega-3 essential fatty acid). To put this in perspective, one tablespoon of chia seeds contains more antioxidants than blueberries and more calcium that milk!

strawberry lime chia frescaChia seeds are extremely hydrophilic (which means they love water) and because of this, can soak up to 9-10 times their weight in water! This means that chia seeds can help keep you stay hydrated and feel fuller longer (from all the soluble fiber they provide).

Strawberry Lime Chia Fresca

Description

Get hydrated with this incredible, refreshing whole fruit energy drink.

Ingredients

  • 2 1/2 cups strawberries
  • 1/2 cup water
  • juice of 2 limes
  • 4 cups of water
  • 2 tbsp chia seeds
  • 3 tbsp agave nectar

Instructions

  1. Place strawberries and water in a food processor and whirl away (for about 45 seconds).
  2. Strain this mixture through a fine mesh strainer, separating the strawberry pulp from the juice.
  3. Place the strawberry juice in a large pitcher.
  4. Add lime juice, agave, chia seeds a remaining water.
  5. Mix well and allow the chia fresca to sit in the fridge for about an hour (to chill and to allow the chia seeds to gel a bit more).


Notes

You may also substitute coconut water for the water in this recipe for extra hydration and flavor! I also like to pour 1/2 a cup of sparkling water mixed with 1/2 cup of chia fresca when I’m feeling fancy.
You may also wish to save the strawberry pulp and use to make ice cubes! Just set the pulp into ice cube molds and freeze for 1-2 hours.
